Baked Potato Soup

When winter arrives, we go for our recipe box and immediately turn to the recipe for baked potato soup. This quick baked potato soup recipe is a warm, cozy soup that is anything but ordinary.  

It is similar to a baked potato, but better. It's one of our favorite cold season soups for supper, but once the leftovers are in the fridge, we can't wait to reheat it for lunch the next day.  

The potato soup dish comes together quickly. After you've peeled and sautéed your potatoes and onions, all you have to do is stir in the ingredients and let them boil.   

To save cooking time, microwave your potatoes before peeling and mashing. Just make sure to poke them with a fork before placing them in the microwave.   

Top with bacon bits and Cheddar cheese, and your dinner guests will undoubtedly cheer.
