Blueberry Lemon Baked Oatmeal Cups.  

You're right—this dish looks familiar! I based it on my Lemon & Fig Baked Oatmeal Cups, which have been a smash since they hit the site earlier this year. Since figs are scarce most of the year, blueberries have been substituted in the recipe!  

Try Pumpkin Spice Baked Oatmeal Cups for fall! A recent Facebook Live I did for a customer comparing fresh and frozen fruits and veggies inspired this meal.  

I thought this blueberry lemon oats dish would be great to try with both. We wanted to compare cost, look, and most importantly, taste!

INGREDIENTS

3 cups rolled oats 1/3 cup Splenda® Naturals Sugar & Stevia Blend 1 1/2 tsp baking powder  

3/4 tsp cinnamon 1/2 tsp fine sea salt Add 1 tbsp lemon zest and lightly whisk 2 big eggs. 2 1/2 cups milk  

1 tsp vanilla 1 3/4 cup blueberries 3/4 cup chopped pecans
