Skinny Coconut Daiquiri

This slim coconut daiquiri is creamy and coconut-flavored, but it's significantly lighter than typical frozen coconut cream cocktails. Only contains 175 calories and 5 grams of sugar.   

During our honeymoon, I fell in love with coconut daiquiris. We were on St. Croix, and I became the resident mixologist. There was a blender in our villa, so I would wake up almost every morning and whip up a new recipe.  

That feels like a lifetime ago, but coconut daiquiris will always remind me of that great time in our lives!  

I recall goods being really costly on the island, but I did purchase a container of unsweetened vanilla almond milk. It's my go-to milk for overnight oats and smoothies, but it also worked well for cocktails!  

To make this daiquiri lower in calories and sugar, we used unsweetened vanilla almond milk, but you may use any dairy-free or dairy milk you have on hand.  

Unsweetened coconut cream - Adding a small amount of coconut cream gives the drink the creamy, rich texture that frozen coconut drinks are known for.  

frozen banana - the frozen banana chunks help make the daiquiri thick and creamy and gives it a hint of sweetness without making it taste too banana-y.-

Lime juice - All daiquiris require a little amount of lime juice; a daiquiri is literally defined as a beverage mixed with rum and lime juice.
