Tomato Avocado Salad

Name pretty much tells it all. Lay out tomato, avocado, and onion slices on a platter, drizzle with olive oil, squeeze lemon juice, and season with salt and crushed black pepper. Super fresh without tossing.   

– 2 large tomatoes, diced – 2 ripe avocados, diced – 1/4 red onion, thinly sliced – 1/4 cup chopped fresh cilantro


– Juice of 1 lime – 2 tablespoons extra virgin olive oil – Salt and pepper to taste

In a large bowl, combine the diced tomatoes, diced avocados, sliced red onion, and chopped cilantro. 

In a small bowl, whisk together the lime juice and extra virgin olive oil to make the dressing. Season with salt and pepper to taste. 

Pour the dressing over the salad and gently toss until everything is well coated. 

Serve immediately as a side dish or as a topping for grilled chicken, fish, or tacos.
