Peanut Butter and Jelly Chia Pudding

If so, you know I'm in the perfect breakfast rut right now: steel-cut oats with peanut butter, toasted almonds, and a simple blueberry compote.

Several of you have asked me for the recipe. And because I'm a tease (and I think oats are so simple), I decided to take that premise and make it more intriguing.

Have you seen chia pudding? Talk about eye candy! This dish is easy, requiring only seven basic ingredients and 30 minutes of prep time (including chilling). The magic happens in the fridge, when it gels and thickens to a pudding consistency.

Why chia seeds? So nice and nutritious. They're cool because they absorb ten times their weight in water and transform almost anything they're mixed with into a wonderful pudding or gel. 

They can also replace flaxseed in a flax egg. It resembles kitchen science.They're also healthful because they include Omega 3 and 6 fatty acids, fiber, protein, and calcium (to mention a few).

The basis is a blueberry compote made with wild blueberries, orange juice, and chia seeds

The chia pudding has almond and coconut milk, peanut butter, maple syrup, vanilla, and chia seeds.

Add another tablespoon of peanut butter and a couple fresh blueberries on top for a nutritious breakfast or snack that tastes like dessert.
